Honey Dijon Chicken Salad

  • 4 cups cubed cooked chicken
  • 1 cup seedless green grapes, halved
  • 1 cup seedless red grapes, halved
  • 1/4 cup dried apricots, diced
  • 1 cup sliced, chopped celery
  • 1/4 cup sliced green onions
  • 3/4 cup mayo
  • 1 Tbsp. Dijon mustard
  • 2 Tbsp. honey
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • *1 cup sliced almonds- optional
Combine first six ingredients in large bowl. In a small bowl combine mayo, mustard, honey, salt, and pepper. Mix well. Stir into other six ingredients. Chill if desired. Add nuts right before serving.


Notes: This is my mother's recipe. It is her claim-to-fame! Everyone will bring her the ingredients to make "The" Chicken Salad. I don't like it with the nuts, but that is just me! It does take a while to make! But the reward is soooooo worth it! Enjoy!
