Broccoli Casserole

  • 2 bunches fresh broccoli
  • 1 can crm of mushroom soup
  • 1/2 cup mayo
  • 1 egg, beaten
  • 1 cup + 1/4 cup shredded cheddar cheese
  • 1/2 cup Ritz Crackers

Cook broccoli until soft in a saucepan, covered with water. Drain, cool and cut into bite size pieces. Mix soup, mayo, egg and 1 cup cheese. Fold in broccoli pieces. Pour into buttered 8x8 pan or casserole dish. Top with Ritz crackers. Bake for 30 minutes. Sprinkle remaining 1/4 cup cheese on top. Return to oven until cheese is melted, approx 5 minutes.

This is definitely our Holiday side dish no matter what the main course.

Spinach Cheese Bake

  • 3 tbsp Butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 8 oz. Velveeta, shredded
  • 1 pkg (10 oz) frzn chopped spinach, thawed & drained
  • 1 1/2 cups soft bread crumbs
  • 3 eggs, lightly beaten
  • 1/2 tsp garlic salt
  • 1/4 tsp dried oregano
  • 1/4 tsp pepper

In a medium saucepan over low heat, melt butter; blend in flour until smooth. Cook and stir for 1-2 minutes. Gradually stir in milk; bring to a boil. Cook and stir for 2 minutes. Remove from the heat; stir in cheese until melted. Add spinach, bread crumbs, eggs and seasonings; mix well.
Spoon into an ungreased 1 1/2 qt. baking dish. Bake, uncovered, at 350 for 45 to 50 min. or until lightly browned.

(for the soft bread crumbs, I used bread cut up into very small squares)

This dish is kind of like a soufle, for the spinach lover!!

Corn al la Great

  • 2 lg pkg frozen niblet corn (not cream style)
  • 1 pkg Philadelphia cream cheese (room temperature)
  • 1 stick of real butter (not margerine)
  • 1 tsp sea salt (or to taste)
Put all ingredients into a medium sauce pan and cook on medium until ingredients begin to melt; turn to low heat. Stir occasionally. Do not cook too long else corn will become tough. Cook about 2 -5 minutes after ingredients have dissolved.

This recipe is a WOW getter when served at pot-lucks etc. And it's EASY!

Recipe is good halved for smaller number of servings.

Corn Casserole

  • 1 - 15 ½ oz can whole kernel corn, drained
  • 1 -8 oz pkg Jiffy corn muffin mix
  • 1 - 14 1/2 oz can cream style corn
  • 1 cup sour cream
  • 1 stick butter, melted

In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream, and butter. Pour into a greased casserole. Bake at 350 de­grees for 45 to 60 minutes, or until golden brown.

Now ladies and germs....this is good!!

Spinach Madeline

  • 4 tbsp butter
  • 2 tbsp flour
  • 1/2 cup milk
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 6 oz roll jalapeno cheese
  • red pepper to taste
  • 2 pkgs frozen chopped spinach
  • 2 tbsp chopped onions
  • 1/2 cup vegetable liquid **
  • 1/2 tsp celery salt
  • 1/4 tsp salt
  • 1 tsp Worcestershire sauce
  • bread crumbs

Cook spinach per package directions ** Drain and reserve liquid. Melt butter in sauce pan. Add Flour & blend until smooth but not brown. Add milk & blend. Add onions, cook until soft. Add the liquid slowly, cook until thick. Add seasoning & cheese, stir until melted. Add cooked spinach. Put in any size casserole dish. Top with butter & bread crumbs. Cook at 350 until hot and bubbly....This may be served as a side dish or as an appetizer. When served as an appetizer - serve with crackers (wheat thins, socialables triscuits etc.....)

Baked Beans

  • 2 (15 ounce) cans baked beans with pork
  • 1/2 cup packed brown sugar
  • 1/2 onion, chopped
  • 1/2 cup ketchup
  • 1 tablespoon prepared mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon red wine vinegar
  • salt and pepper to taste
  • 4 slices bacon, sliced

Preheat oven to 350 degrees F (175 degrees C).
In a 9x9 inch baking dish, combine the pork and beans, brown sugar, onion, ketchup, mustard, Worcestershire sauce and vinegar and season with salt and pepper to taste. Top with the bacon slices.
Bake at 350 degrees F for 1 hour, or until sauce is thickened and bacon is cooked.

This is always my dish to bring to potlucks and get togethers!!

Potato Casserole

  • 2 Ibs Frozen Hashbrowns
  • 1 Can Cream of Mushroom Soup
  • 1 Can Cream of Chicken Soup
  • 1 8oz Sour Cream
  • 1 8oz Cream Cheese
  • 1 Chopped Onion (White)
  • 1 Stick of Butter
  • Salt & Pepper to Taste or Use Tony’s Seasoning

Mix Hashbrowns & Chopped onions in a bowl, add the soups, cream cheese, sour cream, salt & pepper and mix all together. Melt butter and pour on top before you bake.

350 degrees for 1 hour.

This Casserole can be made as a side dish or as a meal, you pick!!! It’s “DELISH”
