Broccoli Casserole

  • 2 bunches fresh broccoli
  • 1 can crm of mushroom soup
  • 1/2 cup mayo
  • 1 egg, beaten
  • 1 cup + 1/4 cup shredded cheddar cheese
  • 1/2 cup Ritz Crackers

Cook broccoli until soft in a saucepan, covered with water. Drain, cool and cut into bite size pieces. Mix soup, mayo, egg and 1 cup cheese. Fold in broccoli pieces. Pour into buttered 8x8 pan or casserole dish. Top with Ritz crackers. Bake for 30 minutes. Sprinkle remaining 1/4 cup cheese on top. Return to oven until cheese is melted, approx 5 minutes.

This is definitely our Holiday side dish no matter what the main course.
