White Chicken Chili

  • 2 tbsp olive oil
  • 2 white onions, chopped
  • 4 cloves garlic, chopped
  • 1-4oz can green chilies
  • 1 pkg McCormick white chili seasoning
  • 1 tbsp cumin
  • 2 cans chicken broth
  • 2 cans white beans
  • 3 cups chicken breasts, cubed

Heat olive oil in a dutch oven. Cook chicken until no longer pink. Remove & cool. Saute onions, garlic and chilies in the same pot until onions are clear in color. (Add more olive oil if needed) Add broth & seasonings & simmer for 15 minutes. Add chicken & beans & simmer another 15 minutes. (Add more seasoning, if needed, to taste)

This tastes so great!! Even better served with some Buttermilk cornbread. Enjoy!!
