Hot Potato Salad

  • 10 to 12 red potatoes, cut up & boiled
  • 1lb bacon, cooked & crumbled
  • 2/3 cup of bacon grease
  • 1 lg onion, diced
  • 2/3 cup sweet relish
  • 1/4 cup vinegar
  • 1/2 cup sugar

Cook potatoes, set aside. Cook bacon, set aside, reserving 2/3 cup grease. Empty skillet, put 2/3 cup bacon grease back in pan and cook onion in grease until soft. Remove from heat, add relish. In a separate bowl, combine sugar & vinegar. Add to relish mixture. Then just combine all, bacon, relish, and potatoes. Set 2 hours serve warm.
