Buttermilk Cornbread

  • 1 stick butter, melted
  • 2/3 cup white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 tsp baking soda
  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 1/2 tsp salt
  • 2 tbsp honey

Combine melted butter & sugar. Quickly add eggs & beat until well blended. Combine buttermilk with baking soda. Stir in butter mixture. Stir in cornmeal, flour & salt until well blended. Add honey. Pour batter into prepared pan. Bake 30-40 minutes.

About a year ago, I was on a cornbread quest, trying to find the perfect cornbread. This is now my go to recipe every time. It's absolutely delicious eaten with a little honey drizzled over it. Enjoy!!
