Spinach Madeline

  • 4 tbsp butter
  • 2 tbsp flour
  • 1/2 cup milk
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 6 oz roll jalapeno cheese
  • red pepper to taste
  • 2 pkgs frozen chopped spinach
  • 2 tbsp chopped onions
  • 1/2 cup vegetable liquid **
  • 1/2 tsp celery salt
  • 1/4 tsp salt
  • 1 tsp Worcestershire sauce
  • bread crumbs

Cook spinach per package directions ** Drain and reserve liquid. Melt butter in sauce pan. Add Flour & blend until smooth but not brown. Add milk & blend. Add onions, cook until soft. Add the liquid slowly, cook until thick. Add seasoning & cheese, stir until melted. Add cooked spinach. Put in any size casserole dish. Top with butter & bread crumbs. Cook at 350 until hot and bubbly....This may be served as a side dish or as an appetizer. When served as an appetizer - serve with crackers (wheat thins, socialables triscuits etc.....)
